Shiitake mushrooms are highly nutritious, high in vitamins and proteins with a wide complex of amino acids. Interestingly, shiitake mushrooms are one of the few foods that contain vitamin D that is not artificially added. In traditional medicine, they have been used since ancient times to treat various digestive-related diseases or simply to boost immunity.
They can also be taken simply for their nutritional value with water, juice, plant milk or yoghurt.
Of course, no one can imagine the famous miso soup without shiitake mushrooms. Firstly, the texture of mushrooms is porous, so they absorb a lot of water and become watery. However, adding them to the soup at the end will give it an extra rich layer of flavour. If you want to add a similar richness to your vegetable broth, add dried shiitake mushrooms!
And what about mushrooms in powder? Use them as a condiment by simply adding salt and pepper. This trio is perfect because shiitake mushroom powder is just an instant dose of umami flavour! Add a teaspoon or two of tofu to omelettes, boiled noodles, soups and wait – the taste will be completely different – rich and vibrant.
