The product is made from the edible seaweed Wakame(Undaria pinnatifida). Seaweed of European origin, dehydrated and chopped. Raw seaweed is dehydrated at low temperatures.
Goal
Wakame must be prepared in advance: boiling for 5 minutes or rehydrating in water for 10 minutes (their dry weight increases sixfold)
Salads shall use rehydrated and blanched produce.
It is used as an accompaniment to various dishes; used in soups, stews, rice, pasta, etc.
Suitable for the general public, except infants and young children (1-3 years).
Suitable for vegans and vegetarians.
Opportunities
– Sugar-free.
– High in fibre.
– Taste and smell: delicate oyster flavour, slightly astringent.
– Texture: fleshy and slightly crisp.
– Appearance: fresh dark brown, turns green when boiled. The white colour that may appear is due to the algae’s own salts, which act as a natural preservative.
Reference amount consumed by an average adult (8400 kJ/2000 kcal).
It is recommended to monitor the amount of iodine in the final product.
Approximately 4 g of rehydrated wakame and 1 g of dehydrated seaweed contain 150 μg of iodine (NRV according to EU Regulation 1169/2011).
