Probably not everyone has heard of Bulgur. It is broken durum wheat, which is an excellent alternative to products made from refined wheat. However, it is not only a pragmatic alternative, but also a nutritious one: bulgur is a source of several vitamins and minerals and is high in fibre. Cooked bulgur porridge has a nutty taste, takes longer to chew, is more nutritious than rice or couscous and contains more fibre, protein, vitamins and minerals: it is high in calcium, phosphorus and iron.
Pour boiling water over the rinsed grits (1 cup of grits requires 1½ cups of hot water) and cook for 10-12 minutes after the water has boiled.
