Organic auricular fungus(Auricularia auricula-judae) is an edible mushroom used for centuries in traditional Chinese medicine and Asian cuisine. It grows naturally in Asia, Europe and North America and is most commonly found on dead or decaying wood, especially on elder trees. The name ‘ear mushroom’ comes from the shape of the ear and the creamy consistency of the gelatine. Historically, this mushroom has been valued not only for its culinary but also for its medicinal properties. In traditional Chinese medicine, it is considered useful for improving blood circulation, strengthening the respiratory system and joints, and maintaining the general health of the body.

The high fibre content can have a positive effect on digestive and intestinal health.
This mushroom also has natural blood-fluidising properties, so it is recommended that people taking blood-fluidising medications take it in moderation. Large quantities may cause digestive discomfort in some people.

Uses
Ausaini is commonly used in soups, stews and salads after soaking in water. Although there are no strict dosage guidelines, moderate use as part of a balanced diet is considered safe.

Preparation
Take a handful of dried ears, but be careful – they will expand 2-3 times after soaking. After soaking in warm water for 20-30 minutes, these exquisite mushrooms expand and turn dark brown with a slippery texture. After soaking and cleaning (cut off if you find hard particles), they are ready to use in any dish.
If you are making a salad, blanch the soaked mushrooms in boiling water for 3-5 minutes, drain and rinse in cold running water to cool.

Ear salad – full of flavour and health benefits
Ingredients:
10-15 dried ear leaves (Auricularia auricula-judae)
2 tablespoons goji berries
1 tablespoon sesame oil
1 tablespoon soy sauce or rice vinegar (optional)
Sesame seeds for garnish (optional)

Preparation instructions:
– soak the mushrooms in warm water for 20-30 minutes until soft. Blanch the soaked mushrooms in boiling water for another 3-5 minutes, drain and rinse in cold running water to cool.
– allow the mushrooms to dry slightly. If necessary, cut into smaller pieces.
– Soak the goji berries in warm water for a few minutes to plump them up.
– make the sauce: in a small bowl, mix the sesame oil and soy sauce (or rice vinegar if you prefer a more acidic taste).
– Mix the salad: put the soaked mushrooms and goji berries in a bowl.
– pour the dressing over the ingredients and mix gently.
– garnish and serve: sprinkle with sesame seeds; serve immediately.
