Preparation: Cook washed wild rice in a 1:2 ratio (1 portion rice to 2 portions water) over low heat for about 45 minutes.
Wild rice is the most unusual of all rice types, being dark brown, even black. They have a strong, distinct flavour, similar to herbs, spices and a slightly smoky aftertaste. Wild rice is perfect for salads and can be used in dishes with lots of spices and thick dressings.
